Cookin' up a storm...

My card mojo has gone South for the Winter. In the interim, I've been trying out new recipes on my  ahem! for my kids. Does anyone else have children that are totally polar opposites with food? Bella will eat just about any fruit on the planet, Cristian won't. Cristian ♥ mac & cheese. Bella doesn't. Seriously, if one will eat it, chances are the other won't. It's about as reliable as the changing of the guard.

So, I stumbled upon For the Love of Cooking. There are great recipes here using ingredients I actually have in my fridge & cabinets. I like that. Also, Pam has two kids~ another bonus. I have made a few different recipes from her blog with great success amongst my clan.

Last night I fixed Turkey Meatloaf Muffins with Spinach & Mashed Taters. A couple changes I would make to this in the future is to incorporate the spinach into the meatloaf muffins & maybe add chopped carrots, too. Aside from that, Cristian ate four of these puppies. They were really quite tasty, easy & fun. I wish I had pretty pictures like Pam has to share, but Ron took our camera to Kuwait :(

The night before last was Daisy Scout night. Our Daisies meet about 45 minutes away. I could find a closer troop, but Bella loves her fellow home  schooled Daisies, and Cristian has a couple of boys to be rambunctious with while we have meetings. The only problem is hungry kids when we get home. I need something quick & tasty to feed them almost immediately. Enter another one of Pam's great recipes Shredded Beef & Avocado Tostadas. I put the meat in the crock pot in the morning & was able to make a great meal when we got home. The one change I made was to make these into soft tacos as opposed to tostadas, so there was a little less mess. I used Trader Joe's guacamole in place of the avocados & had to omit it for Bella's tacos. Otherwise it was a hit. I never used Cotija cheese before, but now I see it being a return player in the future.

Tonight will be a toss up between stuffed shells or garlic ginger chicken. Go check her out, I know you'll be glad you did.

I made broccoli soup the other night... heh heh... it got 3 thumbs up, two thumbs down (the older boy and the girlfriend- they went out for McD chicken nuggets after) and one "they call me Mikey, I'll eat anything."
