Pumpkin Muffins, MMMMMMMMMMMM!!!!

Oh, I forgot to add in the chocolate chip part. Now, do I have you hooked? Everything is better with chocolate.

Last night the kids and I made yummy chocolate chip, pumpkin muffins. Another saga in my plan to give them more vitamins without them knowing they're eating something healthy. Okay, maybe not with the chocolate chips, but you get my drift. Also, it's Autumn! What says "Autumn" more than "pumpkin"?

So, I Googled the recipe and here is the recipe I found from Recipezaar :

Ingredients
4 eggs
2 cups sugar
1 (16 ounce) can pumpkin
1 teaspoon vanilla extract
1 1/4 cups vegetable oil (yes, 1 1/4 cups)
3 cups flour
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon salt
12 ounces semi-sweet chocolate chips (Regular or mini, I like mini best)

Directions
1 In large mixing bowl beat eggs, sugar, pumpkin, vanilla and oil until smooth.
2 Mix dry ingredients together and mix into pumpkin mixture. Fold in chocolate chips.
3 Fill greased or paper-lined muffin cups 3/4 full.
4 Bake at 400 F for 16-20 minutes.

If you visit the link above, it will take you to the recipe. There are some handy, healthy cooks who have managed to squeeze out some of the oil, sugar, and other stuff that I just put in anyway. Also, if you don't want 36 muffins occupying space in your kitchen (or stomach), there's a serving size converter.

What is UP with those healthy recipes, anyway? Obviously we are not proper homeschoolers, but I make my pumpkin muffins the exact same way, but I have not yet been introduced to the choco chip additions. Too fabulous!
